I learned an important lesson the other day. Do not spray non-stick cooking spray over an open flame.  I probably should have already known that. Oops.  Luckily there were no injuries, and I still have my eyebrows.  That’s what I get for trying to grill corn on the  cob indoors. I should have just stuck to this delicious corn recipe – no grilling needed – eyebrow friendly. This recipe is super duper delicious. Its not very healthy but who cares. It’s a great side dish for Thanksgiving, Christmas or other special occasions, but its also a good dish to make anytime, just because.  We’ve made it a part of our Christmas Eve dinner menu for the past few years now and it’s always a huge hit. The recipe comes from my Mom’s good friend Marcia who is an excellent cook. Go pass this recipe on to everyone you love! Oh and please remember not to spray anything aerosol near an open flame. 


  • 2 TB Butter
  • 2 TB chopped onion
  • 2 TB Flour
  • 1/2 tsp Salt
  • 1 Cup sour cream
  • 1 1/2 lbs. frozen corn
  • 2 TB chopped celery
  • 6 slices bacon, cooked, drained and chopped
  • 1 TB fresh parsley, chopped


  1. Preheat the oven to 350 degrees

2.  In a large saucepan, melt the butter over medium heat. Add the onion and saute a few minutes, until transparent.

3. Add the flour and salt to the onion and butter, stir to combine

4. Slowly stir in the sour cream until mixture is smooth.  Add the corn and celery and cook until heated through, stirring occasionally

5. Stir in half of the chopped bacon. Pour mixture into a greased two quart casserole dish.  Top with remaining bacon and chopped parsley

6. Bake for 35-40 minutes
