I’ve always liked healthy food, heck, I’ve always liked all food. A distaste for the healthy stuff is not the reason my behind is larger than I would like, the problem is I like unhealthy food just as much as (okay more than) healthy food. I mean, come on, does anyone ever really get a craving for something low-fat? I sure didn’t, until now….This chicken is so freaking good, and I’m not even a big chicken person. I usually prefer to eat mammals and fish. I don’t know exactly what it is, but I loved it. It tastes like it’s fried but it’s not. Magic! And the combo of the peppery arugula with the sweet tomato and the crunch from the onion mmmm mmmm mmmm. You should go make this for me right now. Continue reading
I’m back! I’d like to say I haven’t posted in almost a week because I’ve been busy doing something really important like volunteering at an animal shelter or cleaning up the local beaches but really I’ve just been watching a lot of television and movies and being lazy. I did watch a few classics this past week in honor of Oscar season. Have you seen Funny Girl with Barbara Streisand? I absolutely loved it, and can’t believe I went 28 years without seeing that movie. While I ate this chili, I watched Fatal Attraction – luckily not during the scene with the rabbit. That movie is creepy! Luckily the chili made me feel safe and warm. This is very different from classic meat lovers chili but very delicious. The fun thing about chili is you can jazz it up with whatver toppings you like. I went for a mexican theme with my toppings but feel free to top yours with whatever suits your fancy. Continue reading
I had an epipheny the other day. Making a good salad is just like putting together a cute outfit. If you have good stuff to work with, it’s really quite easy – all you have to do is toss it together! Of course, shopping for the good stuff for your wardrobe can be a lot more dangerous for your wallet than shopping for good stuff for a salad. So maybe I need to spend more time making salads and less time shopping online. I’ll be skinnier and richer – excellent plan!
Do you like beet and goat cheese salads? I think they are amazing. Some people think beets tast like dirt, but I don’t think so at all. I love them! And they are so good for you. Apparently they help lower your cholesterol and keep you looking young. Score! Trader Joe’s sells them already cooked, peeled, and ready to go in a nice little package. I used them, and it took me less than 5 minutes to make this salad. I think I ate it in less than 5 minutes too. I couldn’t resist. Continue reading
This is what I made for my valentine and, aside from the mild kitchen disaster, it was quite a success. What mild kitchen disaster you ask? Well, let’s just say I learned the hard way to always ensure the lid is on tight before vigorously shaking a bottle of buffalo sauce. See Exhibit A:
Please notice that my glass of champagne was unharmed. I believe that was the Valentine’s Day magic at work. Enough about my clumsiness, let me tell you a little about this pasta. Do you like buffalo wings? Do you like cheese? If you answered “yes” to either of the above, you need to go make this pasta. I’ve visited 26 of the 50 states. Since that’s a majority, it makes me an expert on the American people. I can easily say that the nicest people in this fine country are in Minnesota, hence the well-deserved nickname “Minnesota Nice”. I had quite a fun time visiting friends in Minnesota years ago and kept asking them when we were going to eat some hot dish. I had no idea what hot dish was, I just heard it was what people in Minnesota ate, kinda like pineapples in Hawaii or salmon in Alaska. Sadly (or maybe not so sadly), my friends’ thought too highly of me to feed me hot dish. After reading Wikipedia’s description of it, you can see why. But, as I started to make this casserole the other night, it dawned on me – this is hot dish! And it is darn right delicious! My Fiance was ready to pack up and move to Minnesota after just a few bites (okay maybe that’s an exagerration, no cuisine could convince us to trade in our 70 degree San Diego winters). But, this really is very good. It’s not exactly a low-fat dish, but it has broccoli in it so it can’t be that bad right? Go make it now and after you’re done eating, plan a trip to Minnesota so you too can meet the nicest people in the U.S! Continue reading
I’ve been in denial for quite some time now but, I think I need glasses. I guess it’s not the worst thing in the world, I mean, it’s really just another cute accessory right? And, maybe they will make me look smarter? I can use all the help I can get in that department. It still makes me sad though, a reminder I will not be forever youthful. So, I will continue to put off going to the eye doctor, and instead will start eating lots of carrots. Carrots are a super food for your eyes apparently. Holy Amazingness. This pasta is sooooo good! I am so happy I found this blog, it is filled with so many delicious and creative recipes. I am in love. I am counting down the hours until lunchtime so I can eat my leftovers. I am also very proud of myself that I managed to roast a pepper on an open flame without catching anything on fire. I’ve had a few mishaps in the past involving dish towels and loose-sleeved sweaters.
Don’t be intimidated by the long list of ingredients in this pasta, that’s what makes it so delicious. It takes a little bit of time, but if you prep everything before you start cooking its really quite simple, and oh so worth it. Please make this pasta soon, I promise you, you won’t be sorry. I’m usually not a fan of two-in-one products. Remember Pert Plus? It left my hair in a big tangled mess. Then there’s that Goober PB & J stuff. I’ve never tried it, but it really scares me. These however, I could seriously get on board with. I’m also totally on board with these muffins. Muffins and coffee go together like peas and carrots, cookies and milk, grilled cheese and tomato soup, corona and lime – you get the drift. What a genius idea to combine the two! Plus, I love the idea of caffeneited baked goods, considering “Sleepy” from Snow White & The Seven Dwarfs is my alter ego. Maybe I will take a nap at my desk this afternoon and dream of all the other delicious sweets I can spike with instant coffee granules. Continue reading
