We had a going away party for one of our paralegals who is having a baby boy any day now and I was quite proud of these adorable desserts I made. Food coloring is so much fun! You could make pink ones for Valentine’s Day, Green ones for St. Patrick’s Day (one of my favorite holidays), Red and Blue ones for the 4th of July etc. Color blocking isn’t just for the fashion world. These little guys were quite a hit, even after I warned everyone that there were four whole sticks of butter in the recipe. Be forewarned, these babies are SPICCCYYY! Although, maybe if you actually follow the recipe and measure out the proper amount of chipotle peppers you won’t burn your tongue off like I did. I think my eyeball estimate of two tablespoons was a bit off, but at least my Fiance loved them that way. He even put extra chipotle peppers on his enchiladas – is he crazy???!!! Does he not have nerves in his mouth?! Maybe I’m just a big wimp, but please go easy on the chipotles if you are a wimp like me. Other than the small risk of lip and tongue swelling, this recipe is very delicious and extremely satisfying considering how healthy it is. I made it a little less “skinny” by using regular cheese instead of reduced fat cheese but that’s only because reduced fat cheese is against my religion, so feel free to use the reduced fat stuff if you like. Would you like to know what I did Friday night? It’s a great insight into how cool I am. I came home from work, grabbed a giant chocolate chip cookie and hopped into bed to begin the daunting task of clearing up space on the DVR. I made it all the way through Jersey Shore obviously, as it’s the best television show ever made. But then, about 15 minutes into Grey’s Anatomy, I fell asleep – at 6pm. I woke up about an hour later with chocolate chips smashed onto my chest and cookie crumbs all over the bed. I then decided it was time to do something productive with my life so I got out of bed and poured myself a glass of wine. Oh, and then I made this Strata so I would have something delicious to wake up to this morning. What’s great about Strata is you do all the work the night before, then in the morning you just have to pop it in the oven and poof! delicious, hot breakfast without having to dirty up any dishes. I have an embarrassing confession to make. As a lawyer and a blogger, I really should be more educated on the subject, but I have no idea what SOPA and PIPA are about. I only know enough to be concerned that everyone is going to hate my little puppy now because her name is Pippa. But seriously, how cute is my little Pippa?
Enough about laws, politics and canines. Let’s talk about important things, like soup! There really is something magical about soup, and the best part about this one is that it’s a skinny soup packed with nutrients. Do you know how good Kale is for you? It is a serious super food. I just learned this recently. Again, being “in the know” is clearly not my thing. I like to pretend I live under a rock sometimes. I’m sure I’ve mentioned this before, but I love Giada De Laurentiis. I have every one of her cookbooks, and her Saturday morning cooking show set as a top recording priority on my DVR. However, sometimes I feel a bit deceived by her. There is no way a woman that teeny truly eats all the rich pasta dishes and decadent desserts she frequently makes on her show. I think I finally found her secret…..In the non-TV world, she is eating dishes like this amazing halbut on a regular basis as opposed to Nutella filled, fried ravioli. The sinful stuff is saved for special occasions and the light, fresh and healthy stuff is a staple. Moderation – the secret of life. Shhhh don’t tell anyone! If word gets out, my favorite Jersey Shore cast member Ronnie might lose his Xenedrine endorsement deal! But seriously, this fish is super delicious and easy to make. So, this is Martha Stewart’s recipe for Snickerdoodles. As I’ve mentioned before, I’m not a super huge Martha fan. I like to say it’s because of that whole insider trading thing, but let’s be honest, it’s really because she makes me feel inadequate. I can barely draw a stick figure, I most certainly cannot make homemade wrapping paper and potpourri. However, the woman sure does know how to make a cookie. Her chocolate chip recipe is the best I’ve found. And these snickerdoodles were pretty good too. However, as I was making them, I couldn’t help but think of all the things I had done in the last few days that Martha would never do. Here’s a snapshot:
1. Watch the Jersey Shore and love every second of it
2. Run out of sugar while making Snickerdoodles and exclaim loud enough for the neighbors to hear, “Sh**! What do I do now?!”
3. Drop my flat iron in the toilet.
4. Mention the word toilet on a food blog

I purchased my first Bon Appetit magazine at the airport over the holidays, and I am in love. I need to order a subscription. It is top on my very long and overwhelming “to do” list, right above getting the puppy microchipped and re-doing the backyard. I guess it’s quite an easy task in the grand scheme of things. Maybe I will place my order today. I’m feeling quite inspired. Many of the Bon Appetit recipes were a bit challenging and are something to be saved for a weekend dinner when I have lots of time to cook, but this recipe was quick, easy, healthy and flavorful. So far, I’m 2-0 on healthy dinners this week. Yay! Maybe I won’t have to wear a Muumuu the whole time I’m in Hawaii after all. Continue reading
I was a little slow to jump on the “It’s January so I must eat healthy” bandwagon. But I guess that’s what happens when you plan a trip to Las Vegas the weekend after the New Year. I think I ate more red meat this past weekend then I do in an average month. I actually went to a restaurant called The Heart Attack Grill. What is wrong with me?! I have a Hawaii trip coming up this Spring! I need to get my ass in gear! But, on a side note, if you are ever in Las Vegas you should really check out The Heart Attack Grill. It’s a pretty awesome experience. I only ordered a single, I swear!! I will try and make up for it this week with lots of salmon and green things. Oh, and hours of sweaty fun playing Just Dance 2 on the Wii. So Fun! I’m a dork. I know. Shut up and go make this soup. Continue reading
This is man food at its finest. I should’ve made this for my honey a long time ago and I would have received my engagement ring much sooner. He scarfed down three of these babies like there was no tomorrow and then gave me a big sloppy BBQ sauce kiss. I also managed to put back three of these and thought they were quite delicious. However, I was incapable of kissing anyone as my lips felt like they had been lit on fire (as previously mentioned, consuming spicy foods is not one of my talents). Maybe I shouldn’t have used Stubb’s spicy BBQ sauce in addition to all those jalepnos. Whoops. Oh well, I survived. If you are a lover of spice you will absolutely love these sliders. If you’re a spiceophobic like me, you can leave out the jalepenos and use a mild BBQ sauce. If you’re a health nut, don’t shy away from this recipe, just substitute ground turkey for ground beef, or my favorite – ground bison. Continue reading
The holidays are over. Sad. This means I have to go back to starting my day with coffee instead of mimosas. Can I get a Booorrring?! Did you make a new year’s resolution? I don’t really bother anymore, as it’s usually about 11:00am on January 1st when I’ve already broken my resolution. This year I decided my resolution would be to figure out how to make a perfect bloody mary. And guess what?! By 2:00pm yesterday my resolution had been conquered! This is turning out to be the most successful year yet. Whoever invented the bloody mary was a pure genius. There is absolutely no better cure for a hangover, and it goes so well with savory breakfast foods. I love em love em love em! Yet, for some silly reason, I never bothered making my own, I would only have them at restaurants. That has changed now that I’ve discovered how easy it is to make them. Cheers to a wonderful 2012!
