It’s almost Christmas!! Just 8 more days. I can tell its right around the corner because my pants are starting to get a little tight. But who cares, that’s what new year’s resolutions are for right? In our family, Christmas Eve has always been the big day. We have a big dinner and my Aunt makes about a million cookies that we all gorge ourselves on while opening presents. These cookies are one of the classics that we’ve had as long as I can remember and they never fail to satisfy. They are so simple to make yet so adorable to look at and absolutely delicious. I’ve eaten four in the past 24 hours. Whoops
I’ve been very neglectful of my little blog these past few weeks. The heatwave we’ve been having has made me extremely lazy, and has also put a huge damper on my desire to fire up the stove and oven. That’s why I made these cookies at 6am, before our non-air conditioned house turned into a sauna. I am NOT a morning person, but man oh man were these cookies worth rising early for. They’re really just basic chocolate chip cookies with broken up oreo pieces inside. Simple but heavenly. I ate a few for breakfast, obviously. That’s the problem with early morning baking…. I made these cookies last week and I’ve been meaning to post them ever since but I seem to have misplaced my wit. I just can’t think of a fun peanut butter cookie related story. But I don’t want to hold back any longer, so all you need to know is these cookies are delicious, fun to make, and everyone loved them. I made these babies for Saint Patrick’s Day and earned about five new best friends. I made them again this weekend for a birthday party and was reminded how good they are. I only had a small bite of one since I’m on that Hawaii diet, but I am seriously regretting not eating at least one whole one, or five. Looks like I will be making them again soon, which is no big deal because they are quite easy to make – only three ingredients! Yes, three! You can make these with thin mint cookies if it’s girl scout season, but in the off season, you can use Keebler’s grasshopper cookies. I’ve been on a search for mint chocolate chips but have yet to find them. If you can find green mint chips those would be perfect! I just put a little food coloring in white chocolate, but this time around I made a few with regular chocolate too. Get creative and do whatever you like.
I am having one of those weeks where I wish I could inject wine into my bloodstream via an IV. It is Friday which is wonderful, but it looks like next week might be a wine syringe week too. Wah!!! Whoever said Stressed is Desserts spelled backwards was right on. Bacon is Nocab spelled backwards, but I’m not really sure what that means. However, I do know that when it is not acceptable to be drunk off wine all day, the next best thing to do is eat bacon and chocolate all day. And no, bacon does not taste weird inside chocolate chip cookies, it tastes absofrigginloutely delicous. The dough is even better, I ate it for breakfast earlier this week. I figured since the dough had eggs and bacon in it, it was a perfectly acceptable breakfast food. I have excellent logic.
I think my blood pressure has doubled this week. So many things to do and not enough time! Today was supposed to be my easy day, but so far it hasn’t exactly worked out that way. I woke up bright and early to pop these delicious cookies in our new oven. Yes, new oven! So exciting! Except, it appears I am not smart enough to use this new oven. I couldn’t figure out how to turn the damn thing off. So, at 7am, I had my first nervous breakdown of the day. My better half was at work so he was no help. I consulted the owner’s manual (first time I’ve ever read one of those things), but sadly it was no help (now I remember why I never read those things). So, I resorted to tauntrum throwing and guess what – it magically turned off! Moral of the story – when all else fails, throw a good old fashioned tantrum. Thank God Saint Patrick’s Day is coming up this weekend. I hear green beer and potato skins are both excellent at lowering blood pressure. Continue reading
We had a going away party for one of our paralegals who is having a baby boy any day now and I was quite proud of these adorable desserts I made. Food coloring is so much fun! You could make pink ones for Valentine’s Day, Green ones for St. Patrick’s Day (one of my favorite holidays), Red and Blue ones for the 4th of July etc. Color blocking isn’t just for the fashion world. These little guys were quite a hit, even after I warned everyone that there were four whole sticks of butter in the recipe. An apple a day may keep the Doctor away but a pat of butter keeps the blues away. Continue reading
So, this is Martha Stewart’s recipe for Snickerdoodles. As I’ve mentioned before, I’m not a super huge Martha fan. I like to say it’s because of that whole insider trading thing, but let’s be honest, it’s really because she makes me feel inadequate. I can barely draw a stick figure, I most certainly cannot make homemade wrapping paper and potpourri. However, the woman sure does know how to make a cookie. Her chocolate chip recipe is the best I’ve found. And these snickerdoodles were pretty good too. However, as I was making them, I couldn’t help but think of all the things I had done in the last few days that Martha would never do. Here’s a snapshot:
1. Watch the Jersey Shore and love every second of it
2. Run out of sugar while making Snickerdoodles and exclaim loud enough for the neighbors to hear, “Sh**! What do I do now?!”
3. Drop my flat iron in the toilet.
4. Mention the word toilet on a food blog

It’s almost Christmas!!! I get to fly home to my parents’ house this afternoon. Yay! I get a 3 1/2 day weekend. Yay! I get to go on a train decorated with christmas lights tonight and drink hottie toddies and hot buttered rum. Double Yay! The Grinch has left the building! What are you doing today? Crashing through your kitchen like a tornado trying to bake some last minute christmas cookies? Well if your oven breaks, don’t panic – make these! No oven needed. All you need for these babies is five ingredients, a willingness to get a little messy, and a major sweet tooth. These may not be the most beautiful cookie but they are quite the crowd pleaser. They kinda taste like homemade reese’s peanut butter cups – but better. Put your santa hat on, pour yourself a cup of christmas cheer, and go make these right now. I am a grinch today. A grumpy, green, greasy banana peel, grinch. Many things have come together to put me in this grinchy state. First, I went to Nordstrom Rack last night to get some last minute presents for the boyfriend. My eyes were distracted from the Men’s department for a bit when I saw a rack full of black skinny jeans and decided I needed a pair. However, when I got in the dressing room and tried the pants on, I discovered that all this holiday eating had caused me to look like ground pork being stuffed into a sausage casing. No skinny jeans for this girl. So, in order to make my lardy self feel better, I bought a pretty, sparkly, red O.P.I. nail polish to give me some Christmas cheer. When I got home, I discovered that the nail polish never made it into my shopping bag even though the $8 made it onto my credit card. $8 down the drain. No fun. Add that unfortunate shopping experience to the fact that a “certain place that shall not be named” (hint – I spend approximatly 40 hours a week there and it’s not my kitchen), has really been ticking me off lately, and you have Little Miss Grinch. I’m not going to do anything about my anti-christmas spirit mood , even these cheerful cookies won’t help, we all reserve the right to be a grinch every now and then. Maybe tomorrow I will wake up feeling more like a Who. I hope so. Continue reading
